Summer Berries Compote

A versatile compote for serving with desserts or breakfast

  • 2-3 tbsp water

  • 1 vanilla pod, split in half

  • 175g strawberries, hulled and halved

  • 175g raspberries

  • 175g blueberries

  • 3 fresh basil leaves


  1. Bring the sugar and water to a boil in a small non-stick saucepan and simmer for 10 minutes with the vanilla pod. Stir regularly

  2. Transfer the vanilla sugar mix to a large non-stick saucepan. Add all of the berries, turn up the heat and simmer for 5 minutes. Be careful not to overcook the berries; they should hold their shape

  3. Remove the vanilla pod and drain off any excess liquid if necessary

  4. Tear and add the basil leaves. Stir to mix the leaves in well

  5. Serving suggestions:

    • with porridge

    • with non-dairy yoghurt

    • on toast

    • on waffles

    • on pancakes or crepes

    • with vegan cheesecake or tort

    • with non-dairy ice cream or sorbet

    • add to a smoothie


You can substitute the berries for any other seasonal berries or fruit
