
Ingredients
¼ cucumber
1 avocado
100g strawberries
A couple of handfuls of rocket
2 tbsps virgin olive oil
1 tbsp balsamic vinegar
1 tbsp lemon juice
Fresh mint, torn
Salt and pepper, to taste
Preparation
Cut the cucumber into 4 quarters lengthways, then slice.
Cut the avocado in half, remove the stone and cut it into slices.
Hull the strawberries and then cut them into quarters.
Combine the olive oil, vinegar, lemon juice, mint and seasoning in a ramekin or mug.
Scatter the rocket in your serving bowl and drizzle with a small amount of the dressing.
Arrange the strawberries, cucumber and avocado on the rocket and drizzle with the remaining dressing.
