Candlemas Juniper & Rosemary Sorbet Recipe

A refreshing winter palate cleanser

Therefore in line with our 8 seasonal fragrances of candles and home fragrance products we are sharing with you a small selection of recipes that contain ingredients that are either in season at that time of year or contain herbs and spices that feature in our product ranges.
Serves 4
Ingredients 400ml water
150g caster sugar
5 rosemary sprigs plus more to decorate 250ml tonic water 4 tablespoons lemon juice
6 juniper berries
2 tablespoons gin
Notes
- Make a large batch and keep this in the freezer for spontaneous dinner entertaining
Method
Bring the water, sugar, juniper berries and 4 of the rosemary sprigs to the boil on the hob. Remove from heat to cool and infuse once the sugar has dissolved.
Once the liquid has cooled, remove the rosemary and juniper berries, and stir in the tonic water, gin and lemon juice.
Finely chop the remaining rosemary and mix in.
Pour into a container and place in the freezer. Take out and stir every 20 minutes. It should take around 2 hours to solidify. Alternatively you could use an ice cream maker.
To serve as a palate cleanser, decant sorbet into shot glasses, martini glasses or another small receptacle.
